4 oz. Pancetta
4 Chicken Thighs, bone-in
Salt, to taste
Pepper, to taste
4 Garlic Cloves, minced
½ Onion, diced
1 Tomato, diced
1 Tbsp. Tomato Paste
2 c. Spinach
2 c. Heavy Cream
1 Tsp. Garlic Powder
1/3 c. parmesan cheese, grated
2 tablespoons fresh flat-leaf parsley, chopped
Avocado Oil
Instructions:
Season chicken on both sides with salt and pepper.
In a skillet, over medium-low heat add 1 tablespoon of oil. Sauté pancetta, until golden brown. Remove from skillet, set aside.
Place the chicken thighs skin side down in the skillet and cook for about 10-13 minutes. Flip the chicken, then cook for about another 15 minutes, until the chicken is cooked through. Remove from pan, set aside.
Add onions and sauté until translucent, about 5 minutes. Add garlic, stir until fragrant. Stir in the tomatoes, and tomato paste. and spinach until the spinach is wilted.
Add the heavy cream, salt, pepper, and garlic powder, bringing to a boil.
Add in Parmesan cheese, parsley, and pancetta stirring until the sauce has thickened slightly.
Place the chicken back in the pan, spooning the sauce on top of the chicken. Enjoy!
