2 tablespoons coarsely grated onion

2 teaspoons sesame oil
¾ cup cornstarch
1 ½ teaspoons salt
½ teaspoon baking soda
8 cups vegetable oil
Sesame seeds and sliced spring onions (scallions) to serve, optional

Instructions:

Step 1: Dry Out the Wings
Lay the wing pieces out on a large tray so they are all separated. Place in the fridge for 24 hours, uncovered. This step is to dry them out, resulting in a crispier end product.

Step 2: Prepare the Sauce
Heat 2 tablespoons of the vegetable oil in a medium saucepan over medium heat. Add the garlic, onion, and ginger, and stir-fry until fragrant, about 1-2 minutes. Add the remaining sauce ingredients—soy sauce, mirin, ketchup, gochujang, honey, and sesame oil. Simmer for 7-10 minutes until the sauce thickens.

Step 3: Heat the Oil
While the sauce is simmering, heat the remaining vegetable oil in a deep saucepan to (320°F).

Step 4: Coat the Wings
Mix together the cornstarch, salt, and baking soda. Roll 8 of the wing pieces in the cornstarch mixture to coat them thoroughly. Gently lower the coated wings into the hot oil. Deep fry for 10 minutes until they start to turn golden. Remove the wings from the oil and drain on a rack over paper towels.

Step 6: Coat in Sauce
Add the wings to the warm sauce and stir to coat them thoroughly.

Step 7: Serve
Sprinkle the sticky wings with sesame seeds and sliced spring onions. Serve immediately with rice and pickled vegetables or sliced cucumber for a complete meal.
